
Uncommon & luxurious, Saffron Crème Brûlée, combines the subtle earthy flavor of saffron with a texture of custard base, topped with caramelized sugar crust.
Ingredients:
- 2 cups heavy cream
- 1 cup granulated sugar
- 1/2 cup whole milk
- 1/4 teaspoon kosher salt
- 1/2 teaspoon saffron threads, soaked in 1 tablespoon hot water
- 2 large egg yolks
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated sugar (for caramelizing)
Instructions:
- Preheat the oven to 300°F (150°C).
- In a medium saucepan, whisk together cream, sugar, milk, and salt.
- Add the soaked saffron threads and their liquid to the mixture.
- In a separate bowl, whisk together egg yolks and vanilla extract.
- Gradually pour the warm cream mixture into the egg yolks, whisking constantly.
- Pour the mixture into ramekins or small baking dishes.
- Place the ramekins in a large baking dish and add hot water to come halfway up the sides.
- Bake for 25-30 minutes or until set.
- Remove from the water bath and let cool to room temperature.
- Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
- Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin.
- Caramelize the sugar with a kitchen torch or under the broiler, Saffron Crème Brûlée is ready.
