SAFFRON CRÈME BRÛLÉE

Uncommon & luxurious, Saffron Crème Brûlée, combines the subtle earthy flavor of saffron with a texture of custard base, topped with caramelized sugar crust.

Ingredients:

  • 2 cups heavy cream
  • 1 cup granulated sugar
  • 1/2 cup whole milk
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon saffron threads, soaked in 1 tablespoon hot water
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for caramelizing)

Instructions:

  1. Preheat the oven to 300°F (150°C).
  2. In a medium saucepan, whisk together cream, sugar, milk, and salt.
  3. Add the soaked saffron threads and their liquid to the mixture.
  4. In a separate bowl, whisk together egg yolks and vanilla extract.
  5. Gradually pour the warm cream mixture into the egg yolks, whisking constantly.
  6. Pour the mixture into ramekins or small baking dishes.
  7. Place the ramekins in a large baking dish and add hot water to come halfway up the sides.
  8. Bake for 25-30 minutes or until set.
  9. Remove from the water bath and let cool to room temperature.
  10. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  11. Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin.
  12. Caramelize the sugar with a kitchen torch or under the broiler, Saffron Crème Brûlée is ready.
