PISTACHIO FUDGE

  • 1/2 cup (120ml) light corn syrup
  • 1/2 cup (120ml) sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (60g) unsalted roasted pistachios, chopped
  • 1 cup (250g) white chocolate chips
  • 1 tablespoon (15g) unsalted butter
  • Pinch of salt

Instructions:

  1. Line an 8-inch (20cm) square baking dish with parchment paper.
  2. In a medium saucepan, combine sugar, corn syrup, and sweetened condensed milk. Place over medium heat, stirring until sugar dissolves.
  3. Bring mixture to a boil, then reduce heat to medium-low and simmer for 10-12 minutes or until 235°F (118°C) on a candy thermometer.
  4. Remove from heat and stir in vanilla extract, pistachios, and white chocolate chips until melted and smooth.
  5. Add butter and salt; stir until combined.
  6. Pour into prepared baking dish and refrigerate for at least 2 hours or until set.
  7. Cut pistachio fudge into squares and enjoy!
